Hello suzanne I have not have the pleasure to dive into your work of art(ebook) yet, but is on my next endeavour to do. As I am a new novise baker on the block I am still journey to master the fundamental and perhap tune skills. Not long ago I took an online course with a wonderful person and work of art, however, i have not be able to find a puzzle try to get a good sponge/almost perfect cake. So many intended and continue not pass a sunk cakes most time. I notice thought that she uses self raise flour and perhap may be a flour that is hard to master. Here in canada we don not use self raise flour, just regular one and why and a bit hesitant to buy your collection is that I may come across same issue. Is there a substitute way to replace self-raise flour with american style one?
By the way, what a stunning and an amazing job you do, I am hoping one day I create beautiful art as yours.
